In this unique and inspiring session, Sean will share with you the importance of protecting Australia’s fragile ecosystem and what they do to protect and conserve the critically endangered candle bark forest they hold themselves custodians of. Knowing that no one wants to leave a winery empty-handed, Sean will guide you through the delicate process of handmaking fine sparkling wine. Reconnect with a bygone era as you hand disgorge, dosage and cork your very own bottle of sparkling wine to take home with you.
