Presented by Barbecue Asylum which is made up of the Australian 2020 SCA Ancillary Points Champions and multi-award-winning barbecuers Shane and Chloe Scott from Barbecue Asylum Competition Barbeque Team. In this class, you will be cooking on a variety of barbeques such as Drum smoker, Pellet Grill, Webers, Reverse Flow Offset and Cyprus Grill. They will be covering the trimming of meats including beef short ribs, pork shoulder, lamb racks, rump cap and chicken wings. Immersive cooking demonstrations including beef short ribs, pork shoulder, lamb racks, caveman style reverse seared rump cap tacos with charred capsicum salsa, smoked brisket (mince) cheeseburgers with chilli bacon jam (including mincing the perfect burger), Jamaican jerk chicken, Mexican street corn, and apple smoked New York style cheesecake.
