Big. Loud. Shared. Spectacular. It’s pasta – and you just know it’s a party. Four bona fide afficionados unite for this Saturday night extravaganza: Trisha Greentree, Adam D’Sylva, Andrew Davies and Rosa Matto. Beautiful chaos is set to ensue, that of watches unchecked, flowing conversation and the theatre common to all great meals. Chefs will be out on the floor, introducing their dishes and serving guests. There’s nothing standard about this dinner, or those shaping it. Greentree is executive chef of cult Sydney restaurant Fratelli Paradiso, where modern Italian meets savvy service. She has worked everywhere from California to Denmark, always letting remarkable produce shine. D’Sylva – born to an Indian mother and Italian father – channelled both influences at Tonka and Coda, the acclaimed Melbourne restaurants he shaped for 14 years. New joint Decca will open soon; Ivanhoe gelato shop Boca is testament to his skill in sweet treats. Adelaide diners know Davies best as founding partner and chef at restaurants including Osteria Oggi and Press Food & Wine. In early 2023 he revamped Stirling’s Patch Kitchen & Garden, offering smart all-day dining in relaxed surrounds. The magic of slow food continues to captivate Matto, who has worked as a cookery teacher, caterer and consultant for three delicious decades. Much of her work takes place in community kitchens, working with time-honoured Italian recipes.
